Paderno is a partner in the Italian guide published by Slow Food Publishing that honours the excellence of territory and tradition. 1752 recommended restaurants, including osterie, agriturismi, wine bars with kitchen. Moreover, three hundred places awarded the "Snail" for their green effort and hospitality, in harmony with the values of Slow Food. Osterie d'Italia is a journey into the most authentic Italian cuisine.

Best Host Award promoted by Paderno

The 2024 Slow Food Best Host edition awarded Vito Valente, with his restaurant XFood, in San Vito dei Normanni, Puglia. Together with talented chef Giovanni Ingletti and his team, wich also include five employes with cognitive disabilities, Vito embodies Slow Food values: inclusion, sustainability, excellence and the enhancement of the territory.

Tubetto with small fish: the perfect match of Apulia gastronomic tradition, chef Ingletti’s expertise and sustainable ingredients. The recipe was made with a very special catch: all the small fish that get caught in the nets, but have no market. A choice meeting even Slow Food philosophy.
